When we sat down to create a feature for the month of March my first thought was that we had to put our twist on a traditional Irish dish because the 17th is St. Patrick’s Day!
What are some of the foods that come to mind when you imagine Irish cuisine? I grew up eating reubens on St. Patty’s Day. Maybe you had corned beef & cabbage over mashed potatoes. One thing we knew for sure was that our dish needed to have potatoes, cabbage, and corned beef in it!
Our kitchen manager, Josh, worked his magic and we’re very excited to be featuring our take on a traditional Irish Colcannon Casserole.
He took all of those Irish staples and baked them in an amazing cream sauce to create a dish along the lines of scalloped potatoes but let me tell you – this colcannon is to die for!
Our EBD Colcannon is served up with grilled rye bread (you’re going to want to dunk it in that sauce), comes with salad, and will be available at lunch and dinner throughout the month of March.
